1 cup all-purpose flour

1/2 teaspoon kosher salt

Glaze:

1 cup powdered sugar, sifted

1 teaspoon vanilla extract

3 tablespoons milk


Instructions

1. Preheat oven to 350°F. Grease a loaf pan with nonstick spray or cake release.

2. Stir chopped apples with brown sugar, cinnamon, and ginger. Set aside to macerate.

3. Whisk egg, granulated sugar, oil, sour cream, and vanilla in a large bowl until smooth.

4. Whisk flour, baking soda, and salt in a separate bowl.

5. Add dry ingredients to wet and stir until almost combined.

6. Fold in about three quarters of the apple mixture.

7. Pour batter into prepared loaf pan and spread evenly.

8. Spoon remaining apples over the top and lightly press in.

9. Bake 50 to 55 minutes until internal temp reaches 200°F and a tester has a few moist crumbs.

10. Cool in pan 30 minutes, then transfer to a rack to cool fully.

11. Whisk powdered sugar, vanilla, and milk until smooth.
