Ingredients
1/2 cup milk, room temperature (any milk works; almond milk for dairy free)
1/2 cup maple syrup
1/4 cup unsweetened applesauce
1/3 cup melted coconut oil or butter
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups gluten-free all-purpose flour
1 cup almond flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1 apple, cored and very thinly sliced

Topping: 1 tablespoon melted butter or coconut oil
Instructions
1. Preheat oven to 350°F. Line and lightly grease a 9×9-inch cake pan.
2. Whisk milk, maple syrup, applesauce, melted coconut oil, eggs, and vanilla until smooth.
3. Add gluten-free flour, almond flour, baking powder, baking soda, and cinnamon. Stir just to combine.
4. Fold in thinly sliced apple evenly throughout the batter.
5. Pour batter into the prepared pan and smooth the top.
6. Stir sugar, cinnamon, and melted butter or coconut oil for the topping.
7. Sprinkle the cinnamon sugar mixture evenly over the batter.
8. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
9. Cool completely on a wire rack. Dust with powdered sugar or drizzle simple icing if desired.
Notes
Use any milk of choice. Maple syrup keeps it vegan; honey also works.
Coconut oil adds a subtle coconut note.
