Ingredients

1 1/4 to 1 1/2 pounds pork tenderloin

3 slices smoked bacon

1/2 teaspoon chipotle powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/4 teaspoon salt

1/2 teaspoon black pepper

3 sprigs fresh rosemary

1 tablespoon extra virgin olive oil


Instructions

1. Preheat oven to 400°F. Mix chipotle powder, garlic powder, smoked paprika, salt, and pepper.

2. Pat pork dry. Rub spice mix all over. Place one rosemary sprig underneath and two on top.

3. Wrap with bacon, overlapping slightly. Secure with 3 to 4 toothpicks.

4. Heat oil in a skillet over medium heat. Sear pork on all sides until bacon is crisp, about 10 minutes.

5. Transfer to an oven safe pan. Bake 15 minutes or until the internal temperature reaches 145°F.

6. Tent with foil and rest 10 minutes. Slice thick and serve.

7. Air fryer option: follow the same prep, then cook at 400°F for about 25 minutes, turning halfway if needed, until 145°F inside.

Notes

Swap rosemary with fresh sage, thyme, or oregano.

Use 1/2 teaspoon dried herbs if replacing fresh.

Adjust chipotle to taste for mild or spicy heat.
