Ingredients
1 lb boneless skinless chicken breast, cut into bite-size pieces
1 cup cooked rice (white, brown, or cauliflower)
1 cup mixed vegetables (broccoli, bell peppers, carrots), chopped
2 tablespoons olive oil
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
Sauce:
1/2 cup mayonnaise
2 tablespoons sriracha, plus more to taste
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon lime juice
Garnish: sliced green onions, sesame seeds (optional)
Instructions
1. Cook rice according to package directions; set aside.
2. Cut chicken into bite-size pieces. Season with salt and pepper.
3. Heat olive oil in a skillet over medium high heat. Sauté chicken 6 to 8 minutes until golden and 165°F internal temperature.
4. In a bowl mix mayonnaise, sriracha, honey, garlic powder, and lime juice. Adjust sweetness or spice to taste.
5. Add vegetables to the skillet with chicken. Cook 2 to 3 minutes until just tender but still crisp.
6. Remove from heat and stir in the sauce until chicken and vegetables are evenly coated.
7. Serve over rice. Garnish with green onions or sesame seeds.
