Ingredients
2 tablespoons plain gelatin powder
1 cup sugar-free fruit juice (cranberry, lemon, or orange)
1 cup cold water
Instructions
1. Pour cold water into a bowl and sprinkle gelatin evenly over the surface. Let it sit for 5 minutes to bloom.
2. Warm the sugar-free fruit juice gently in a small pot without boiling.
3. Add the bloomed gelatin to the warm juice and stir until fully dissolved and smooth.
4. Pour into silicone molds or small serving cups, then refrigerate for about 3 hours until set.
Notes
Let the gelatin bloom in cold water first for the smoothest texture.
Warm the liquid gently and avoid boiling.
For a softer set, use slightly less gelatin.
Sweeten to taste with stevia or monk fruit if you want.
For added protein, stir in collagen powder.
For a creamy option, stir in a little Greek yogurt after the liquid cools slightly.
Store covered in the fridge up to 5 days, and do not freeze.
