Description
Hearty beef barley soup with tender beef, chewy barley, and rich broth. A one-pot recipe that’s comforting, filling, and perfect for cozy meals or meal prep.
Ingredients
2 tbsp oil
2 lb beef, cubed
8 oz mushrooms, chopped
1 large carrot, chopped
1 yellow onion, diced
3 bay leaves
3 garlic cloves, pressed
4 cups beef broth
1/2 cup pearl barley
1 tbsp salt (adjust to taste)
1 tsp ground black pepper (adjust to taste)
Instructions
1. Heat oil in a large pot. Brown beef cubes on all sides.
2. Add onion, carrot, and mushrooms. Cook until softened and lightly golden.
3. Stir in garlic, bay leaves, salt, and pepper.
4. Pour in beef broth. Cover and simmer for 45 minutes until beef is tender.
5. Add pearl barley and cook for another 20 minutes until fully cooked.
6. Remove bay leaves, taste, and adjust seasoning. Serve hot.
Notes
Use pearl barley for quicker cooking and a thicker texture.
Chuck, stew beef, or oxtail give the best results.
Soup reheats well and tastes even better the next day.
Swap beef with pork, lamb, or chicken with matching broth for variations.
