Description
Juicy, buttery beef tenderloin roast with garlic herb butter — perfect for Christmas dinner. Easy to make, elegant to serve, and full of flavor.
Ingredients
1 center-cut beef tenderloin roast (4 to 4½ pounds), trimmed and tied
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons avocado oil
6 tablespoons softened unsalted butter
6 garlic cloves, minced
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh thyme
Instructions
1. Let the tenderloin sit at room temperature for 1–2 hours.
2. Preheat oven to 425°F (220°C).
3. Mix softened butter, garlic, rosemary, and thyme in a bowl.
4. Pat tenderloin dry and season with salt and pepper.
5. Heat oil in a skillet over medium-high heat and sear the roast for 10 minutes, turning to brown all sides.
6. Spread herb butter on top and insert a thermometer.
7. Roast for 15–20 minutes until desired internal temperature is reached.
8. Let rest for 10–15 minutes before slicing.
9. Remove twine, slice into 1-inch pieces, and serve.
Notes
Use fresh garlic and herbs for best flavor. Ask your butcher to trim and tie the roast for even cooking. Resting keeps the meat juicy. Use a thermometer for accuracy.
