Description

Spooky Bloody Spaghetti with Mozzarella Eyeballs is a fun Halloween dinner with rich tomato sauce, pasta nests, and cheesy olive eyeballs.


Ingredients

1 lb (450 g) spaghetti noodles, cooked

2 28-oz (1.6 l) cans crushed tomatoes

3 tbsp (45 ml) tomato paste

1 medium white onion, minced

6 garlic cloves, minced

2 tbsp (30 ml) olive oil

1 ½ tbsp dark brown sugar

1 tbsp (15 ml) balsamic vinegar

2 tsp Italian seasoning

1 tsp dried parsley

1 tsp salt

½ tsp ground black pepper

¼ tsp baking soda

¼ tsp red pepper flakes

2 tbsp parmesan cheese

½ cup fresh basil, chopped

8 oz (225 g) fresh mozzarella ciliegine

810 large pitted black olives

23 tbsp extra virgin olive oil


Instructions

1. Sauté onion and garlic in olive oil until golden. Stir in tomato paste, sugar, and vinegar; cook briefly.

2. Add crushed tomatoes, seasonings, and baking soda; stir and bring to a simmer.

3. Mix in basil and parmesan, cover, and cook 10–15 minutes.

4. Drain and rinse mozzarella balls. Use a wide straw or knife to cut shallow holes in each ball.

5. Cut olive halves into small round pupils.

6. Arrange spaghetti into nests on a platter, top with sauce, and place a mozzarella ball on each nest.

7. Fill each ball’s cutout with olive oil and add an olive pupil.

8. Garnish with basil and parmesan.

Notes

Prepare spaghetti while sauce simmers to save time.

If straws are unavailable, use piping tips or a knife for cutting mozzarella and olives.

If olive pupils don’t float, trim their backs slightly.

Sprinkle mozzarella eyeballs with salt before serving for more flavor.

Larger nests can hold two eyeballs for individual plates.

Any pasta sauce can be used instead of homemade.

Best served immediately after assembling.

Leftovers can be stored up to 2–3 days; keep mozzarella separate from pasta and sauce in airtight containers in the refrigerator.
