Ingredients
CRUST
2 cups all-purpose flour
1/2 cup packed brown sugar
1 cup (2 sticks) butter, softened
CHEESECAKE LAYER
2 (8-ounce) packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
APPLE LAYER
3 Granny Smith apples, peeled, cored, and finely chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
STREUSEL TOPPING
1/2 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick-cooking oats
1/3 cup butter, softened
CARAMEL
1/2 cup caramel topping
Instructions
1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.
2. Mix 2 cups flour and 1/2 cup brown sugar. Cut in 1 cup softened butter until crumbly. Press into pan and bake 15 minutes.
3. Beat cream cheese with 1/2 cup granulated sugar until smooth.
4. Add eggs and vanilla; mix until combined.
5. Spread cheesecake mixture over the warm crust.
6. Toss chopped apples with cinnamon and nutmeg.
7. Distribute apples evenly over the cheesecake layer.
8. Combine 1/2 cup brown sugar, 1/2 cup flour, oats, and 1/3 cup butter until crumbly.
9. Sprinkle streusel evenly over apples.
10. Bake 30 minutes or until center is set with a slight jiggle.
11. Cool completely, then drizzle with caramel topping.
12. Chill at least 2 hours; slice and serve.
Notes
Use cold butter for the crust and topping to keep the crumbly texture.
Chill several hours before slicing for the cleanest cuts.
Store in the refrigerator for up to 3 days.
Freeze without caramel; add caramel after thawing.
