Description

Festive no bake Caramel Apple Dessert Cups with a crunchy cookie crust, silky salted caramel mousse, and warm cinnamon apples. Perfect for make ahead Christmas parties and family gatherings.


Ingredients

1½ cups crushed vanilla wafer cookies

5 tablespoons unsalted butter, melted

3 tablespoons granulated sugar

8 ounces cream cheese, softened

1 cup powdered sugar

1 cup heavy whipping cream

¼ cup salted caramel sauce, plus extra for topping

2 cups peeled, diced apples

1 tablespoon unsalted butter

1 tablespoon granulated sugar

¼ teaspoon cinnamon


Instructions

1. Mix crushed vanilla wafers, melted butter, and sugar until combined. Press into the bottom of 2 ounce cups to form crusts.

2. Beat softened cream cheese with powdered sugar until smooth and creamy.

3. Whip the heavy cream to stiff peaks. Fold whipped cream and salted caramel sauce into the cream cheese mixture until fully combined. Pipe or spoon mousse over crust.

4. Cook diced apples with butter, sugar, and cinnamon over medium heat until softened and syrupy, 5 to 7 minutes. Cool slightly.

5. Top cups with the caramel apple mixture. Drizzle with extra caramel. Refrigerate at least 1 hour before serving.

Notes

Recipe makes approximately 14 two ounce dessert cups.

For larger cups, yield will decrease.

Cups keep covered and refrigerated up to 3 days.

Use store bought or homemade salted caramel.

Golden Oreos or graham crackers can replace vanilla wafers.

Smaller apple dice works best for mini cups.

No bake dessert; chill at least 1 hour before serving.
