Description
This cozy Chicken and Stuffing Casserole is the perfect one-pan Thanksgiving dinner or quick weeknight meal. Creamy, comforting, and family-approved!
Ingredients
1 box chicken-flavored Stove Top Stuffing (or any flavor)
1–2 lbs boneless, skinless chicken breasts, diced
1 can cream of chicken soup (or cream of mushroom/celery as a substitute)
⅓ cup sour cream
16 oz frozen mixed vegetables
4–5 garlic cloves, minced
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F and coat a 9×13 baking dish with cooking spray.
2. Mix chicken, cream soup, sour cream, vegetables, garlic, salt, and pepper in a bowl.
3. Spread mixture evenly in the baking dish.
4. Prepare stuffing according to package directions.
5. Spread stuffing over the chicken mixture.
6. Bake for about 30 minutes or until chicken is cooked through.
Notes
Any condensed “cream of” soup can be used.
Cheese on top of stuffing adds extra flavor.
Use any variety of vegetables, fresh or leftover.
Run frozen vegetables under hot water for quick defrosting if desired.
Trim chicken well and cut evenly for even cooking.
Leftover or pre-cooked chicken/turkey can be substituted; reduce bake time.
Adding red pepper flakes gives spice.
Homemade stuffing or homemade condensed soup can be used.
