Ingredients
1 tablespoon olive oil
1 medium yellow onion, diced
1 cup sliced carrots
1 cup diced celery
2 tablespoons minced garlic
8 cups chicken broth or stock
2 pounds boneless, skinless chicken breasts or thighs
2 teaspoons freshly cracked black pepper
1 ½ teaspoons kosher salt
1 teaspoon dried oregano
1 teaspoon minced fresh thyme
2 bay leaves
6 oz egg noodles (or small pasta)
Instructions
1. Heat oil in a large pot over medium heat. Add onion, carrots, and celery; cook for 4 minutes.
2. Stir in garlic and cook for 1 more minute.
3. Pour in broth, add chicken, salt, pepper, oregano, thyme, and bay leaves. Bring to a simmer, cover partially, and cook until chicken is tender, about 15 minutes.
4. Shred chicken directly in the pot using two forks.
5. Bring soup to a low boil, add noodles, and cook 6–7 minutes until al dente.
6. Serve hot with chopped parsley and optional bread or crackers.
Notes
Use less chicken for a lighter soup or substitute with bone-in pieces for extra flavor.
Alternate noodles like macaroni or rotini, or use rice instead.
Cook noodles only until al dente to avoid mushiness.
Add lemon juice before serving to enhance flavor.
For more substance, mix in veggies like potatoes, corn, peas, or spinach.
To make it creamy, add a splash of cream or half-and-half.
You can also replace chicken with beef for a variation.
