Tender beef, crisp broccoli, and a rich savory sauce come together in this easy Chinese beef and broccoli recipe you can make at home in minutes.
Ingredients
1 lb boneless flank steak or skirt steak
1 tablespoon soy sauce
1 tablespoon peanut oil or vegetable oil
1 tablespoon cornstarch
1/2 teaspoon baking soda (optional)
1 head broccoli, cut to bite-size florets
1/2 cup chicken stock or beef stock
2 tablespoons Shaoxing wine or dry sherry
2 tablespoons soy sauce
1 teaspoon dark soy sauce (optional)
2 teaspoons brown sugar or white sugar
3 garlic cloves, minced
2 teaspoons ginger, minced
1 tablespoon peanut oil or vegetable oil
Instructions
1. Slice beef against the grain into 1/4-inch slices.
2. Marinate beef with soy sauce, peanut oil, and cornstarch for 10 minutes.
3. Mix sauce ingredients in a bowl until smooth.
4. Steam broccoli in skillet with 1/4 cup water for 1 minute until tender then set aside.
5. Heat oil in skillet over medium-high heat.
6. Sear beef in a single layer 30 seconds until browned then flip briefly.
7. Add garlic and ginger and stir until fragrant.
8. Return broccoli to skillet.
9. Stir sauce again to dissolve cornstarch and pour into skillet.
10. Stir until sauce thickens, about 1 minute.
11. Serve hot.
Notes
For tougher cuts, add 1/2 teaspoon baking soda and marinate for 30 minutes.
Dark soy sauce adds rich color and caramel taste but can be replaced with 1/2 teaspoon molasses.
If no peanut oil, drizzle 1/2 teaspoon toasted sesame oil after cooking.
