Description
A bright and festive Christmas Salad made with mixed greens, juicy oranges, pomegranate seeds, creamy feta, and crunchy candied pecans — tossed in a honey Dijon vinaigrette.
Ingredients
7 cups mixed spring greens
1 1/4 cups orange segments (mandarins, clementines, or tangerines)
1/2 cup pomegranate seeds (or dried cranberries)
1/2 cup crumbled feta cheese
1/2 cup chopped candied pecans
1/3 cup olive oil
1 tablespoon honey
2 teaspoons Dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon minced shallot
Salt and pepper to taste
Instructions
1. In a large bowl, combine the mixed greens, orange segments, pomegranate seeds, feta, and candied pecans.
2. In a small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, minced shallot, salt, and pepper until smooth.
3. Pour desired amount of dressing over the salad and toss gently to coat.
4. Serve immediately for the best texture and flavor.
5. Store extra dressing in the fridge for later use.
