Description

Ingredients

2 cups all-purpose flour

1 cup sugar

1 tablespoon baking powder

1 tablespoon cinnamon

1/2 teaspoon salt

1 cup milk (2% preferred, but 1%, whole, skim, or nut milk may work)

1/2 cup vegetable oil (or light oil or melted butter)

2 large eggs (room temperature preferred)

2 tablespoons sugar (for topping)

1 teaspoon cinnamon (for topping)


Instructions

1. Preheat oven to 375ºF. Grease 18 muffin cups.

2. Whisk together flour, sugar, baking powder, cinnamon, and salt.

3. In another bowl, whisk milk, oil, and eggs.

4. Make a well in dry ingredients. Pour in wet mixture.

5. Stir gently until just combined.

6. Divide batter evenly into muffin cups.

7. Mix topping sugar and cinnamon. Sprinkle over batter.

8. Bake 13-15 minutes until tester comes out clean.

9. Cool briefly before serving.

Notes

Recipe originally used 4 teaspoons baking powder but works fine with 1 tablespoon.

Avoid overmixing for tender texture.

Ensure baking powder is fresh for proper rise.
