Description

Ingredients

½ cup packed brown sugar

Filling: ½ cup packed brown sugar, 2 tsp ground cinnamon


Instructions

1. Preheat oven to 350°F (175°C).

2. In a bowl, whisk flour, baking powder, salt, and cinnamon.

3. In another bowl, beat butter with granulated and brown sugar until fluffy.

4. Add egg and vanilla; mix until smooth.

5. Stir dry ingredients into wet mixture just until combined.

6. Mix filling ingredients in a small bowl.

7. Spread half the dough on parchment, sprinkle filling, and roll tightly.

8. Slice into 1-inch rounds and place on lined baking sheet.

9. Bake 10–12 minutes until edges are golden.

10. Cool slightly, then transfer to wire rack.

Notes

Chill dough 30 minutes for best shape.

Use a cookie scoop for uniform sizing.

Check cookies 1–2 minutes early to avoid overbaking.

Store in airtight container at room temperature up to 5 days.
