Description
Tender chicken thighs, creamy potatoes, and soft green beans slow cooked with garlic and parmesan. Minimal prep, big flavor, and a full dinner in one cozy crock.
Ingredients
1 tbsp olive oil
2 tbsp butter
1 ½ lbs boneless skinless chicken thighs
1 tbsp Italian seasoning
½ tbsp paprika
1 tsp salt
½ tsp pepper
1 ½ lbs baby potatoes
12 oz green beans
5 garlic cloves, minced
½ cup grated parmesan cheese
Instructions
1. Place baby potatoes at the bottom of the slow cooker, cutting larger ones in half.
2. Arrange chicken thighs over the potatoes, then add green beans.
3. Drizzle with olive oil, then sprinkle with Italian seasoning, paprika, salt, pepper, garlic, and parmesan.
4. Place butter pieces on top, cover, and cook on low for 6 hours or high for 4 hours.
5. Stir gently before serving.
Notes
Cut larger potatoes so they cook evenly, or par-cook them if needed.
Browning the chicken before adding to the slow cooker enhances flavor.
