Description

Soft, buttery Crumbl pecan pie cookies with gooey caramelized pecan filling — a festive Thanksgiving treat.


Ingredients

1/2 cup softened butter

1/3 cup vegetable or canola oil

1/2 cup granulated sugar

1/4 cup powdered sugar

1 egg (room temperature)

1 tsp vanilla extract

2 1/3 cups all-purpose flour

1/4 tsp salt

1 tsp baking powder

5 tbsp butter (for filling)

2/3 cup brown sugar (for filling)

1 1/4 cups chopped pecans

1 tsp vanilla extract (for filling)

1/3 cup heavy cream

1/4 tsp cinnamon

1 pinch nutmeg

1 pinch salt (for filling)


Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. Cream butter, oil, granulated sugar, and powdered sugar until smooth.

3. Add egg and vanilla; mix well.

4. Stir in flour, salt, and baking powder until just combined.

5. Divide into 9 dough balls, flatten slightly, and press the center with a 1/4 cup to form wells.

6. Bake for 8–9 minutes until edges are set.

7. For the filling, heat butter, brown sugar, and pecans in a saucepan over medium heat, stirring until sugar dissolves.

8. Let mixture bubble for 1–2 minutes.

9. Remove from heat and stir in cream, vanilla, cinnamon, nutmeg, and salt.

10. Cool for 5–10 minutes before spooning into cookie centers.

11. Let cookies cool for 20–30 minutes before serving.

Notes

Makes 9 large or 16 smaller cookies.

Cookies can be frozen for up to 2 months; store in airtight container with parchment between layers.

Thaw at room temp and microwave 10–15 seconds to restore gooey texture.

Cookies are done when edges are firm and centers are soft—they set as they cool.

For best results, bake cookies ahead and add filling the day of serving.

For smaller cookies, reduce size and bake for 7 minutes.
