Description
Sweet, salty, crunchy, and chocolatey—these Dark Chocolate and Sea Salt Nut Bars are a cozy, make-ahead treat packed with roasted nuts, puffed rice, and smooth dark chocolate.
Ingredients
2½ cups unsalted nuts (¾ cup cashews, ¾ cup peanuts, 1 cup almonds)
½ cup puffed rice
¼ cup brown rice syrup
1½ teaspoons vanilla extract
½ teaspoon sea salt
1 cup dark chocolate chips
2 teaspoons coconut oil
Optional: flaky salt for topping
Instructions
1. Preheat oven to 325°F (160°C). Spread nuts on a baking sheet and roast for 5–8 minutes until fragrant and lightly browned.
2. Line an 8×8-inch pan with parchment paper.
3. In a bowl, mix roasted nuts and puffed rice.
4. Warm brown rice syrup in the microwave for 30 seconds, then stir in vanilla and salt.
5. Pour syrup mixture over nuts and rice; stir to coat evenly.
6. Press mixture into prepared pan and bake for 18–20 minutes.
7. Let cool for 30 minutes, then cut into bars and cool completely.
8. Melt chocolate chips and coconut oil in microwave, stirring every 30 seconds until smooth.
9. Dip the bottom of each bar in chocolate; place on parchment.
10. Drizzle more chocolate on top, sprinkle with flaky salt, and refrigerate until set.
Notes
If brown rice syrup is unavailable, honey can be used, but bars may turn out stickier.
Allow bars to cool completely before slicing for clean edges.
Excess chocolate should drip off before placing on tray to prevent pooling.
Coconut oil helps the chocolate melt smoothly and set faster.
Store bars between parchment layers in an airtight container.
