Description
This Easy Pumpkin Bread is moist, perfectly spiced, and so simple to prepare. A comforting fall treat ideal for breakfasts or snacks!
Ingredients
1¾ cups granulated sugar
½ cup vegetable or canola oil
2 large eggs
15 ounces pumpkin puree
2 cups all-purpose flour
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon table salt
Instructions
1. Preheat oven to 325°F.
2. Grease and flour two 8×4-inch loaf pans; set aside.
3. In a large bowl, whisk together sugar and oil until it resembles wet sand.
4. Add eggs and whisk until well-combined.
5. Stir in pumpkin puree.
6. Add flour, pumpkin pie spice, baking soda, baking powder, and salt; mix until just combined (do not overmix).
7. Divide batter evenly between the two pans.
8. Bake for 40–60 minutes or until a toothpick comes out clean (typically takes the full 60 minutes).
9. Cool in pans on a wire rack for 10 minutes, then remove loaves and cool to room temperature.
10. Serve warm if desired.
Notes
Storage: Store at room temperature in airtight container or zip-top bag for 3–4 days. Freeze by wrapping tightly in plastic wrap, then foil; freeze up to 3 months.
Substitution Notes: Do not substitute pumpkin pie filling for pumpkin puree. Gluten-free flour may work but is not tested. Recipe easily doubles to make 4 loaves. Metal pans preferred.
