Ingredients
1 pound ground sausage
1 cup shredded cheese
1 cup pancake mix
4 eggs
Instructions
1. Preheat oven to 350°F and grease mini muffin tin.
2. Cook sausage in a skillet until browned. Drain and cool slightly.
3. Whisk eggs in a bowl, then add cheese, pancake mix, and sausage.
4. Spoon mixture into muffin tin cups, filling about ¾ full.
5. Bake for 18–20 minutes or until golden and cooked through.
6. Cool slightly before serving.
Notes
Optional add-ins: chopped spinach, diced peppers, or hot sauce.
For a sweeter twist, drizzle with maple syrup or honey.
