Description
Easy Tater Tot Casserole is a cheesy, creamy ground beef and veggie bake topped with crispy tater tots. Quick to prep and perfect for family dinners.
Ingredients
1 pound 90% lean ground beef
1 1/2 cups frozen mixed vegetables
1/2 teaspoon salt, divided
1/2 teaspoon ground black pepper, divided
1/2 teaspoon garlic powder, divided
10.5 oz can cream of mushroom soup
10.5 oz can cheddar cheese soup
2 cups shredded cheddar cheese
28 oz bag frozen tater tots
Instructions
1. Heat oven to 375°F and grease a 9×13-inch baking dish.
2. Brown ground beef in a skillet over medium-high heat, breaking it apart as it cooks, about 6 minutes; drain excess grease if needed.
3. Stir in mixed vegetables, 1/4 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon garlic powder.
4. Add both soups and stir until blended.
5. Spread mixture evenly in prepared baking dish.
6. Top with shredded cheddar cheese.
7. Arrange tater tots evenly on top.
8. Sprinkle with remaining salt, pepper, and garlic powder.
9. Bake about 35 minutes until tots are golden and filling is bubbling.
Notes
Using lean ground beef reduces grease, though excess can be drained if needed.
For make-ahead, assemble beef mixture and cheese in a dish, refrigerate up to 3 days, then add frozen tater tots and bake, adding 5–10 minutes if needed.
For freezing, assemble full casserole, freeze up to 3 months, thaw overnight in refrigerator before baking, adding 5–10 minutes if needed.
Reheat leftovers in a 350°F oven for 20–25 minutes; avoid microwaving to keep tots crispy.
