Description

Juicy skillet-seared chicken in a buttery garlic Parmesan sauce. Quick, cozy, and full of flavor — perfect for weeknight dinners.


Ingredients

2 large boneless skinless chicken breasts

Salt and pepper, to taste

2 teaspoons dried parsley

12 tablespoons olive oil

¾ cup dry white wine (or chicken broth)

4 cloves garlic, minced

3 tablespoons butter

3 tablespoons flour

½ cup freshly grated Parmesan cheese

1 tablespoon fresh lemon juice

1¾ cups chicken broth

¼ cup heavy cream

1 teaspoon Worcestershire sauce

1 teaspoon mustard powder

1 teaspoon honey

½ chicken bouillon cube

½ teaspoon each: onion powder, oregano, basil, parsley


Instructions

1. Slice chicken in half lengthwise to make 2 to 3 thinner pieces. Pound to ½ inch thick.

2. Season chicken with salt, pepper, and parsley.

3. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side. Set aside.

4. Turn off heat. Add wine or broth. Turn heat to medium and deglaze skillet, letting it reduce for 2 minutes.

5. Add garlic and cook for 2–3 minutes until reduced by half.

6. Add butter and flour, stir well and cook for 1–2 minutes to form a roux.

7. Slowly add sauce mixture, stirring continuously. Bring to a boil, then reduce to simmer for 8 minutes.

8. Lower heat, stir in Parmesan cheese a little at a time until melted. Add lemon juice.

9. Return chicken to skillet and simmer 5 minutes until heated through. Garnish and serve.

Notes

Grate Parmesan from a block for best texture and flavor.

Use a dry white wine like Pinot Grigio or substitute chicken broth if preferred.

Add a few drops of Gravy Master for a deeper sauce color if desired.

Serve with mashed potatoes, pasta, garlic bread, or roasted vegetables.
