Ingredients
1 to 1½ lbs green beans
2 tablespoons avocado oil (or olive oil)
6 garlic cloves, minced
¼ cup grated parmesan cheese
¼ teaspoon salt, adjust to taste
½ teaspoon black pepper
Optional: lemon wedges for serving
Instructions
1. Preheat oven to 400°F and line a large baking pan with parchment paper.
2. Trim both ends off the green beans and place them in a large bowl.
3. Add oil, minced garlic, parmesan, salt, and pepper; toss to coat evenly.
4. Spread beans on the pan in a single layer; some overlap is okay.
5. Roast for 15 to 20 minutes until tender with crispy edges; check at 10 to 12 minutes.
6. Optional: squeeze fresh lemon over the beans before serving.
Notes
Trim ends to avoid toughness after roasting.
Oven temperatures vary; start checking early.
Crowding the pan or using two pans may require extra time.
No blanching or precooking required.
Frozen green beans can be used without thawing.
Swap parmesan with Pecorino Romano or Asiago.
