Pizza Dough:

Bread flour 2 cups plus 2 tbsp 312 g

Instant yeast 1 1/8 tsp

Salt 3/4 tsp

Olive oil 1 tbsp

Water 3/4 cup 177 ml

Homemade Pizza Sauce:

Tomato sauce 16 oz

Tomato paste 6 oz

Garlic 2 cloves minced

Dried oregano 1 1/2 tsp

Dried basil 1 1/2 tsp

Sugar 1 tsp

Onion salt 1/2 tsp

Salt 1/4 tsp

Ghost Toppings:

Mozzarella slices 6 113 g

Sliced black olives 1 tbsp

For Pizza:

Prepared pizza dough 8 oz

Olive oil 1 1/2 tbsp

Pizza sauce 1/3 cup

Grated Parmesan 1/4 cup 22 g

Shredded mozzarella 1 1/2 cups 170 g

Olive oil 1 tsp for drizzle


Instructions

1. Combine flour yeast and salt in a food processor. With the machine running add olive oil and water until a smooth ball forms.

2. Let dough rest 2 minutes then process again. Knead briefly and place in a greased bowl. Cover and let rise until doubled about 1 1/2 hours.

3. Blend all sauce ingredients until smooth. Refrigerate until needed.

4. Cut ghost shapes from mozzarella slices with cookie cutters. Cut small olive pieces for eyes and mouths. Set aside.

5. Preheat oven to 450°F. Grease a 12 inch cast iron skillet with 1 1/2 tbsp olive oil.

6. Roll half the dough into an 11 inch round. Press into the skillet and build a 1/2 inch border.

7. Spread 1/3 cup sauce over the dough. Sprinkle Parmesan then shredded mozzarella.

8. Set skillet on the stove over medium heat 5 minutes until edges begin to set.

9. Transfer skillet to the oven. Bake 8 to 10 minutes until crust is golden and cheese melted.

10. Remove from oven. Immediately place mozzarella ghosts on hot pizza so they soften without browning. Drizzle 1 tsp olive oil. Slice and serve.

Notes

Pizza dough can be refrigerated 8 to 16 hours before use or frozen after baking for up to 1 month.

Sauce keeps 1 week refrigerated or 1 month frozen.

Best to add ghosts right after baking so they soften but do not brown.

Large ghost cutter 3 1/2 inch. Small ghost cutter 2 inch.

Olive pieces make the best eyes and mouths.

Store bought dough or sauce may be substituted. One pound of dough makes 2 pizzas.
