Ingredients
3 1/2 tbsp cream cheese (softened, 52g)
1/2 tbsp sour cream (7g, optional)
2 tbsp powdered monkfruit sweetener (20g)
1 egg (room temperature)
1/4 tsp vanilla extract
Instructions
1. In a ramekin, mug or small microwavable bowl, add cream cheese, sour cream and powdered monkfruit sweetener; whisk together.
2. Add egg and vanilla extract; whisk again until smooth.
3. Microwave for 1 min to 1 min 15 sec, depending on your microwave, until the center is set and pulls away from the sides.
4. Let it cool in the fridge or enjoy warm right away.
5. Top with sugar-free strawberry sauce, no sugar added jam, fresh fruit, or whipped cream if desired.
