Description

One Pan Balsamic Chicken brings juicy chicken, sweet tangy balsamic sauce, melty mozzarella, and soft tomatoes together in one skillet for a quick, family friendly dinner with minimal cleanup.


Ingredients

⅓ cup balsamic vinegar

2 tablespoons honey

2 tablespoons avocado or olive oil

2 garlic cloves, minced

1 teaspoon Italian seasoning

1 tablespoon Dijon mustard

8 oz grape tomatoes, halved

8 oz fresh mozzarella balls ciliegine or pearls

2 tablespoons finely chopped fresh basil

2 lb boneless skinless chicken breasts pounded even

2 tablespoons avocado oil or other high heat oil

Kosher salt and black pepper


Instructions

1. Whisk balsamic vinegar, honey, garlic, Dijon, Italian seasoning, salt, and pepper in a bowl.

2. In another bowl combine halved tomatoes, mozzarella balls, and chopped basil. Season lightly.

3. Preheat oven to 400°F.

4. Heat oil in an oven safe skillet over medium high heat. Season chicken with salt and pepper.

5. Sear chicken 1 to 2 minutes per side until lightly browned.

6. Pour in balsamic sauce and bring to a simmer, scraping up browned bits.

7. Remove from heat and top chicken with the tomato mozzarella mixture.

8. Bake uncovered 18 to 23 minutes until chicken reaches 165°F internal temperature.

9. Rest 5 minutes before serving.

Notes

If using ciliegine mozzarella cut in half. If using pearls leave whole.

Pound chicken to even thickness using plastic wrap or a bag and a mallet or rolling pin for even cooking.

Original version used soy sauce tomato sauce and lemon juice. Updated here for clarity with balsamic vinegar.

Serving suggestion: pair with rice mashed potatoes or pasta to absorb the sauce.

Variation: boneless chicken thighs work well. After searing bake 7 to 10 minutes and check doneness.
