Description

Fudgy Pecan Pie Brownies with a glossy, caramelized pecan topping. Simple boxed mix base, bakery taste, and perfect for Thanksgiving or any cozy gathering.


Ingredients

1 family size box brownie mix plus ingredients listed on the box

1 cup granulated sugar

1½ cups corn syrup

4 large eggs

¼ cup unsalted butter, melted

1½ teaspoons vanilla extract

2 cups pecans, chopped or whole

Nonstick spray or butter for greasing


Instructions

1. Preheat oven to 350°F. Grease a 9×13 inch pan.

2. Prepare brownie batter as directed on the box. Pour into the pan and spread evenly.

3. Bake for 20 minutes, until mostly cooked yet soft in the center.

4. Meanwhile whisk sugar, corn syrup, eggs, melted butter, and vanilla until smooth.

5. Stir in pecans until fully coated.

6. Remove brownies from the oven. Pour pecan mixture evenly over the warm brownie layer.

7. Return to the oven and bake 25 to 35 minutes, until the topping looks set with a slight jiggle in the center.

8. Cool the pan completely at room temperature for at least 1 hour.

9. Slice into squares with a sharp knife for neat edges.

Notes

If using regular size brownie mix boxes, use two 8×8 mixes plus their listed ingredients.

Pull the brownie base from the oven about 10 minutes earlier than the box suggests to avoid overbaking before topping.

Use chopped pecans for even bites or whole pecans for a pretty top.

Cool completely before slicing for clean squares.

Storage: cover and keep at room temperature or refrigerate up to 4 days. Freeze up to 3 months in an airtight, freezer safe container.

Substitutions: replace corn syrup with agave, maple syrup, or honey in equal amounts.
