Description
Skewered Salami Eyeballs are quick Halloween party snacks made with mozzarella balls, pepperoni, red bell pepper, and kalamata olives for spooky “pupils.”
Ingredients
1 cup mozzarella balls (pearls or mini bocconcini)
1 red bell pepper, sliced into small wedges
2 tablespoons kalamata olives, finely chopped (plus extra rings for “pupils”)
4 ounces pepperoni stick, cut into ¾ inch chunks and thin rounds
Skewers (6 to 8 inches)
Optional: extra olives for layering
Instructions
1. Use a small knife to make shallow indentations in each mozzarella ball.
2. Finely chop kalamata olives and press a bit into each indentation to form the “pupil.”
3. Cut the pepperoni stick into ¾ inch chunks; also slice thin rounds or strips for layering.
4. Slice the red bell pepper into small wedges.
5. On each skewer, thread a red pepper wedge, then a pepperoni chunk, then a mozzarella “eyeball.”
6. Add a thicker pepperoni slice next for balance.
7. Anchor the base with a thin pepperoni slice and another mozzarella ball.
8. Chill the finished skewers until firm and serve cold.
Notes
Make ahead: Chill for a few hours only. Longer storage can discolor the mozzarella.
Mozzarella: Fresh pearls give the best texture, but any small mozzarella works.
Olives: Kalamata look the most dramatic. Green olives or capers can substitute.
Peppers: Swap red bell pepper with mild chilies for heat.
