Description
This Slow Cooker Caribbean Pot Roast is infused with bright citrus, warm spices, and melt-in-your-mouth tenderness. An easy comfort meal with a bold, tropical twist.
Ingredients
1 tablespoon vegetable oil
5-pound boneless beef chuck roast
2 tablespoons flour
1 teaspoon kosher salt
1/2 teaspoon coarse ground black pepper
2 medium sweet potatoes, peeled and cut into 2-inch chunks
3 large carrots, peeled and cut into 2-inch chunks
1 large onion, chopped
3 cloves garlic, minced
Gravy Ingredients:
15 ounces tomato sauce
Juice and zest of 1 large orange
2 tablespoons packed brown sugar
2 teaspoons dried oregano
2 teaspoons cumin
1 teaspoon coriander
1 teaspoon chili powder
1 teaspoon unsweetened cocoa powder
1/2 teaspoon ground cinnamon
Instructions
1. Heat oil in a large Dutch oven or slow cooker insert on high heat.
2. Coat beef with flour, salt, and pepper. Sear on both sides until browned, about 3–4 minutes per side.
3. Place sweet potatoes, carrots, onions, and garlic in the slow cooker.
4. Top with seared chuck roast.
5. In the same pan, mix tomato sauce, orange juice and zest, brown sugar, oregano, cumin, coriander, chili powder, cocoa powder, and cinnamon. Whisk to combine.
6. Pour sauce over the roast in the slow cooker.
7. Cook on low for 8 hours or high for 5 hours.
8. Garnish with orange zest before serving.
Notes
Searing the meat adds deep flavor.
Layering the vegetables underneath helps create a built-in side dish.
Customize with other vegetables like bell peppers or Yukon gold potatoes.
To bake instead of slow cook, use a Dutch oven at 325°F for 3 to 3.5 hours.
Store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
Make sure internal temperature reaches 145°F for food safety.
