Description
A no-fuss, flavor-packed slow cooker honey garlic chicken that’s tender, sweet, savory, and a little spicy. Perfect for busy weeknights or lazy Sundays.
Ingredients
4 boneless, skinless chicken thighs (about 1½ lb)
¼ cup low-sodium soy sauce
⅓ cup honey
2 tbsp tomato paste
1 tbsp sriracha (adjust to taste)
1 tbsp rice wine vinegar
3 garlic cloves, minced
1 tsp sesame seed oil
4 tbsp water, divided
1½ tbsp cornstarch
2 green onions, sliced (garnish)
2 tsp sesame seeds (garnish)
Instructions
1. In a small bowl, mix soy sauce, honey, tomato paste, sriracha, sesame oil, garlic, rice wine vinegar, and 2 tbsp water.
2. Place chicken thighs in a slow cooker and pour the sauce over.
3. Cook on low for 4 hours or high for 2–3 hours.
4. Shred chicken with forks after cooking.
5. Mix 2 tbsp water with cornstarch to make a slurry. Add to slow cooker and cook an additional 5–10 minutes until sauce thickens.
6. Serve over rice, quinoa, or mashed potatoes, topped with sesame seeds and green onions.
Notes
Can substitute chicken breasts or bone-in cuts; add 30 minutes cook time for bone-in.
Can be prepped ahead and stored: 3 days in fridge or 3 months in freezer.
Browning chicken is not required.
Add vegetables (e.g., broccoli, carrots, cauliflower) 40 minutes before end of cooking time.
Adjust spiciness by modifying sriracha quantity.
Great served over rice, quinoa, or as wrap filling.
