Slow Cooker Ranch Chicken Tacos are cozy, tender, easy, and full of ranch-taco flavor. Perfect for a simple weeknight meal that feels special.
Ingredients
4 boneless, skinless chicken breasts (or thighs)
1 packet taco seasoning
1 packet ranch seasoning mix
1 cup chicken stock
1/4 cup fresh cilantro, chopped
12 flour or corn tortillas
Taco toppings: shredded lettuce, diced tomatoes, shredded cheese, red onions, sour cream, salsa, guacamole, ranch dressing
Instructions
1. Place chicken breasts in slow cooker with taco seasoning, ranch seasoning mix, and chicken stock
2. Cook on low 6-8 hours or high 3-4 hours
3. Shred chicken with two forks, add chopped cilantro
4. Warm tortillas and assemble tacos with chicken and toppings
Notes
Soft flour or corn tortillas preferred
Chicken thighs can be substituted for chicken breasts
Cream cheese can be added for creamier filling
Filling also works in salads, wraps, and rice bowls
Store leftover chicken in airtight container in fridge 2-3 days
