Cute vegan coconut snowmen truffles you can make fast. No bake. Kid friendly. Perfect for Christmas gifts and parties.
Ingredients
320 g dairy free sweetened condensed milk
4 cups fine shredded coconut 320 g plus extra for rolling
3 tablespoons vegan white chocolate or white candy melts melted
3 tablespoons black colored icing or as needed
2 tablespoons orange colored icing or as needed
24 thin pretzel sticks 2 inches each
12 red candy straps 5 inches each
Instructions
1. Mix sweetened condensed milk and shredded coconut in a large bowl until well combined. The mixture should feel sticky and hold when pressed.
2. Roll the mixture into 12 larger balls for the bodies and 12 smaller balls for the heads. Coat all balls in extra coconut.
3. Attach one smaller ball to each larger ball with a dab of melted vegan white chocolate. Let the snowmen firm up at room temperature or chill for about 10 minutes.
4. Decorate each snowman. Pipe black icing for eyes and buttons and orange icing for a carrot nose. Insert pretzel sticks for arms and wrap a red candy strap as a scarf. Use melted white chocolate to secure any loose parts if needed.
Notes
Size depends on how large you roll each coconut truffle.
If dairy free sweetened condensed milk is unavailable use 1 cup coconut cream mixed with 1/4 cup maple syrup. Add more coconut or a splash of syrup to adjust texture.
Icing can be tricky on coconut. Lightly press or scrape the piping tip against the surface as you pipe so it adheres.
These are easy and require no baking. Prep time about 30 minutes.
Store at room temperature up to 1 day. Refrigerate up to 1 week. Freeze up to 1 month.
Pretzel sticks soften over time. Add arms just before serving.
Feel free to add festive touches like peppermint extract cocoa or colored coconut.
