Spooky Spaghetti and Eyeballs Dinner Idea

Description

Spaghetti and eyeballs is a spooky, kid-friendly Halloween dinner with tender meatballs, gooey cheese “eyes,” and saucy spaghetti. It’s fun, quick, and perfect for parties or a playful family night.


Ingredients

1 1/2 pounds ground beef, lean

1/2 cup onion, grated

1/2 cup panko bread crumbs

1/2 cup Parmesan cheese, grated

2 eggs

2 cloves garlic, crushed

2 tablespoons milk

1 teaspoon kosher salt, or to taste

1/2 teaspoon oregano

1/4 teaspoon ground black pepper

4 cups spaghetti sauce

8 green olives with pimento

Mozzarella cheese slices

Black olives (sliced)

Spaghetti noodles


Instructions

1. Combine all ingredients except the spaghetti sauce in a bowl and mix until well combined. Hands work great.

2. Form the mixture into meatballs slightly smaller than a golf ball.

3. Spray the bottom of the Instant Pot with cooking spray and add the spaghetti sauce.

4. Place the meatballs over the sauce, layering if needed. Let them touch but do not squish.

5. Lock the lid and set the valve to sealing. Press Manual and cook on High Pressure for 7 minutes.

6. When the timer ends, allow a 5 minute natural release, then carefully switch to venting for a quick release. Remove the lid and stir gently.

7. Cook spaghetti noodles according to package directions and drain.

8. Combine noodles and sauce from the Instant Pot. Mix until well coated.

9. Twirl noodle “nests” with a ladle and fork and place in a serving bowl or platter.

10. Cut small circles from mozzarella slices and place one on each meatball, then add a black olive slice for the pupil.

11. Arrange eyeball meatballs over the spaghetti nests. Add green olives to taste and serve.

Notes

Equipment: Instant Pot Pressure Cooker.

For stovetop, simmer meatballs in sauce until cooked through, then proceed.

Use turkey or plant based meat if preferred.

Make it extra spooky by drizzling a little extra sauce over the meatballs before serving.
