Sticky Sesame Cauliflower

Description

Crispy oven-baked cauliflower tossed in a sweet, spicy, and sticky sesame sauce. A vegan-friendly Asian-inspired main that’s ready in under an hour.


Ingredients

Scale

1 medium cauliflower, cut into florets

1/3 cup rice flour

1 tbsp cornstarch

1 tsp oil

1/2 tsp garlic powder (optional)

1/4 to 1/3 cup water

For the Sauce:

1.5 tbsp sesame oil

1/4 cup light soy sauce

1 tbsp rice wine vinegar

12 tbsp sriracha sauce

1” fresh ginger, minced

45 cloves garlic, minced

23 tbsp honey or maple syrup

1 tbsp cornstarch

1/4 cup water

Garnish:

Sesame seeds

Spring onions

Sliced red chilies


Instructions

1. Preheat oven to 392°F (200°C) and line a baking tray with parchment or foil.

2. Make a thick batter by whisking rice flour, cornstarch, oil, garlic powder, and water.

3. Coat cauliflower florets in batter and place on tray in a single layer.

4. Bake for 20–25 minutes until crisp and lightly golden.

5. Meanwhile, heat sesame oil in a pan and add soy sauce, rice wine vinegar, sriracha, ginger, and garlic.

6. Simmer for 5–6 minutes, stirring occasionally.

7. Mix cornstarch and water into a slurry and add to pan; stir and cook 2–3 minutes to thicken.

8. If using maple syrup, add it while cooking the sauce. If using honey, stir it in after removing from heat.

9. Toss baked cauliflower into the sauce until well coated.

10. Garnish with sesame seeds, spring onions, and sliced chilies. Serve immediately.

Notes

Use maple syrup for a vegan option and add during cooking.

Add honey only after removing the sauce from heat to preserve its nutrients.

Serve over jasmine rice or noodles for a full meal.

This sauce is also great on tofu, mushrooms, or even chicken.

Sauce can be made ahead and reheated with a splash of water.
