Description
Sweet Potato Bread is moist, warmly spiced, and topped with a crunchy cinnamon sugar crust. It works for breakfast, snack, or dessert, and it’s perfect for Thanksgiving.
Ingredients
For the Bread Batter
1½ cups sweet potatoes, mashed
½ cup butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
For the Cinnamon Sugar Topping
¼ cup granulated sugar
1 teaspoon cinnamon
Instructions
1. Preheat oven to 350°F. Grease or line a 9.25 x 5.25 inch loaf pan with parchment.
2. Cream butter and sugar until fluffy. Add eggs one at a time. Mix in vanilla and mashed sweet potatoes.
3. Whisk flour, baking soda, salt, cinnamon, and nutmeg in a separate bowl.
4. Gently fold dry ingredients into wet until just combined. Pour batter into the pan.
5. Stir topping sugar and cinnamon. Sprinkle about three quarters over batter. Bake 55 to 65 minutes, until a toothpick tests clean or the top springs back.
6. Cool in pan 15 minutes. Transfer to a rack. Slice and serve warm or at room temperature.
Notes
You can use canned sweet potatoes or bake fresh ones, mash, and freeze for later.
Topping sugar can be used to taste; three quarters of the mix is usually enough.
Use parchment paper and clips to prevent sticking and shifting while pouring batter.
Serve with butter, cream cheese, or apple butter.
Store in a ziplock bag in the fridge for up to 5 days.
