Ingredients

1 lb tomatoes on the vine, halved

2 lb heirloom tomatoes (3 large or 4 medium), halved

1 red bell pepper, quartered and seeded

5 garlic cloves, peeled

1 small onion, peeled and quartered

1 tbsp butter

3 tbsp extra virgin olive oil

¼ cup all-purpose flour

1½ tbsp tomato paste

4 cups chicken broth (bone broth or regular)

Salt and pepper to taste

1 tsp sugar (adjust to taste)

¼ cup heavy whipping cream (or more if desired)

1 tbsp fresh chopped basil or 1 tsp dried basil


Instructions

1. Preheat oven to 450°F. Arrange tomatoes, bell pepper, garlic, and onion on a parchment-lined baking sheet and roast for 30–40 minutes until charred.

2. Let cool for 10–15 minutes, then blend until smooth.

3. In a large pot, melt butter with olive oil over medium heat. Stir in flour and cook for 1–2 minutes to form a roux.

4. Add tomato paste and cook 1–2 minutes more.

5. Gradually whisk in 1 cup of chicken broth, then the remaining broth, followed by the blended vegetables.

6. Season with salt, pepper, and sugar.

7. Bring to a gentle boil, then stir in cream and basil.

8. Simmer briefly, adjust seasoning if needed, and serve hot with a drizzle of olive oil, cream, and extra basil.

Notes

Use ripe but firm tomatoes for best flavor. A mix of heirloom and vine tomatoes is ideal.

For spicier soup, add red pepper flakes.

For chunkier texture, skip blending.

Serve with croutons, Parmesan, grilled cheese, or sourdough bread.

Roasted garlic adds a sweet depth to the flavor.

Taste and adjust seasoning throughout.

Add a pinch of sugar to balance acidity if tomatoes are too tangy.
