Cozy Turkey Noodle Soup with tender turkey, soft egg noodles, and a light savory broth. Ready in 35 minutes and perfect for leftover Thanksgiving turkey.
Ingredients
2 tablespoons olive oil
1/2 cup diced yellow onion
2 cloves garlic, minced
1/2 cup diced celery
1/2 cup diced carrots
1/2 teaspoon dried thyme
8 cups low-sodium chicken stock
2 cups chopped cooked turkey
2 cups egg noodles
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
1. Warm olive oil in a large pot over medium heat. Add onion, garlic, celery, and carrots; sauté until softened, about 5 minutes.
2. Stir in thyme, then pour in chicken stock. Bring to a boil, then reduce heat and simmer for 10 minutes.
3. Add turkey and noodles; cook until noodles are tender, about 10 minutes.
4. Season with salt and pepper. Serve hot, garnished with parsley if desired.
Notes
Use leftover turkey from a roasted bird or a turkey breast; chicken can be substituted.
Homemade or store-bought chicken stock works well.
For a thicker soup, reduce the broth slightly or add more noodles.
Leftovers keep well in the refrigerator for 3 days.
For make-ahead, store without noodles to prevent them from becoming mushy; add freshly cooked noodles when reheating.
Freeze the soup base without noodles for best texture.
