Vampire Pasta (Spooky Squid Ink Pasta with Garlic Shrimp)

Description

Spooky squid ink pasta tossed with garlic shrimp, white wine, and lemon. A quick Halloween dinner ready in 25 minutes with bold flavors and a dramatic look.


Ingredients

Scale

12 oz squid ink pasta

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

2 tbsp olive oil

1/4 tsp red pepper flakes (optional)

1/2 cup dry white wine

1/4 cup lemon juice

Salt and pepper to taste

Fresh parsley, chopped

Grated Parmesan cheese (optional)


Instructions

1. Cook pasta in salted boiling water until al dente; drain and reserve 1/2 cup of pasta water.

2. Heat olive oil in a large skillet over medium heat; sauté garlic until fragrant, 1–2 minutes.

3. Add shrimp and red pepper flakes; cook 2–3 minutes per side until shrimp are pink and opaque.

4. Pour in white wine and lemon juice, scraping the skillet; simmer 3–4 minutes to reduce slightly.

5. Add drained pasta to the skillet, tossing to coat; use pasta water if needed to loosen sauce.

6. Season with salt and pepper. Garnish with parsley and optional Parmesan before serving.

Notes

Shrimp can be replaced with scallops or grilled chicken.

For extra spooky effect, drizzle roasted red pepper sauce over the pasta.

Best served hot.

Store leftovers in an airtight container in the fridge for up to 2 days.
