Description

Creamy vegan gravy ready in 5 minutes with pantry staples. Savory, umami rich, and gluten free. Perfect for mashed potatoes, fries, lentil loaf, or tofurky.


Ingredients

1 cup vegetable broth

1 cup water

¼ cup gluten-free all-purpose flour or fine oat flour

2 tablespoons nutritional yeast

1 teaspoon dried thyme (not powdered)

¼ cup olive oil

½ teaspoon fine sea salt (adjust to taste)

¼ teaspoon black pepper (or more to taste)


Instructions

1. Warm the broth and water together until no longer cold.

2. In a saucepan, whisk flour, nutritional yeast, and thyme.

3. Place over medium-low heat and gradually whisk in the olive oil until smooth.

4. Cook for about 30 seconds until glossy and warm.

5. Add salt and pepper.

6. Slowly pour in the broth-water mixture while whisking.

7. Continue stirring until smooth and thickened, about 2–3 minutes.

8. Taste and adjust seasoning as needed.

Notes

For best results, use dried thyme leaves rather than powdered. If using powdered thyme, reduce to ¼ teaspoon.

If the gravy becomes too thick, thin with a bit of broth.

If over-seasoned, mix a small amount of flour and water separately, then add to the gravy and cook to balance flavor.

Skin may form when cooled—whisk to restore smoothness.

Yields about 2 cups. Prep time: 2 minutes. Cook time: 4 minutes. Total time: 6 minutes.

Gravy keeps up to 5 days refrigerated in a sealed container.

Freezer-friendly; thaw before reheating. Reheat over low heat, adding liquid if needed.
